Red bean, spinach and turmeric sauce



Quick and easy red bean, spinach and turmeric sauce:

What’s in it

1 Tbsp oil

Half onion

Clove of garlic – big one

1 ½ tomatoes

Half jar red kidney beans

Half bag of spinach

Juice of half lemon

Salt and pepper

Grated turmeric root

How to cook it

Chop what you can and sauté in the oil for 5 mins.  Add the rest and cook for 10 -12 mins.

How to eat it

In a bowl with a fork and maybe a bib – the tomato and turmeric stain like mad!  Serve with a wee portion of pasta if you are really hungry.

Why is it so good?

Tastes fab, totally nutrient dense, fills you up for ages, low GI and mega turmeric health benefits and if you have with pasta make sure you cook the pasta Al dente because it’s better for you!
